Edamame Tuna Salad

Servings: 2

Cooking time: 30 min


1 1/2 tbsps Peanut Butter (or almond butter)

2 tbsps Sesame Oil

1 tbsp Apple Cider Vinegar

1 tbsp Sesame Seeds 

Sea Salt & Black Pepper (to taste)

2 cups Frozen Edamame (thawed)

1 can Tuna (drained)

1 Carrot (medium, julienned)

1 stalk Green Onion (sliced)


In a medium bowl, add peanut butter (or almond butter), sesame oil, vinegar, sesame seeds, salt, and pepper. Whisk until combined well. In the same bowl, add edamame, tuna, carrot, and green onion. Stir until everything is mixed together and enjoy.
