Raspberry Chocolate Mousse

Chocolate lovers, this recipe will not disappoint!
12 ounces silken tofu
1 teaspoon vanilla extract
1/2 fresh raspberries
1/4 cup maple syrup
1/4 cup cocoa powder
Slivered almonds and cacao nibs
Blend all ingredients in food processor or blender until smooth.
Place chocolate mousse in four individual serving dishes (about 2/3 cup per serving). Chill before serving.
Optional: Top with almonds and cacao nibs when ready to serve.
Be sure to use silken tofu and not firm or extra-firm options. Only silken tofu will yield the proper texture in the finished dessert.
