These meatballs are inspired from many Asian cultures and cooking where a spicy meat "kebab" is the featured item. Feel free to play with different types of protein: turkey, chicken, pork, beef, lamb, etc.
Ingredients:

1 pound ground turkey breast

1 tablespoon meatball spice mix: onion, garlic, pepper, paprika, celery seed

1/4 cup organic, unsalted tomato sauce

pinch thyme
-
dash of hot pepper sauce

1 tablespoon chicken broth

1 tablespoon almond meal
Directions:

Mix all ingredients together and chill for 10 minutes.

Roll the meatball mix into balls. Thread them 3 at a time on a bamboo skewer.

Place on a nonstick pan and top with a little more meatball seasoning spice. Bake for 20 minutes at 400 degrees.

Remove from oven and serve hot.
CHEF'S TIP:
You can serve these over pasta, zucchini noodles, rice, or salad or with grilled veggies. They can be refrigerated and used in pita pockets with salad for lunch the next day. Or freeze them and keep them handy to serve with spaghetti and marinara sauce.
